This Zucchini Casserole is a perfect breakfast recipe. It will serve for 6-8 pieces.

Ingredients:
6 eggs
3 fresh zucchini, grated
1 cup Parmesan, grated
1 cup ricotta cheese
4 fresh tomatoes, chopped
4 day-old bread, diced
20 leaves fresh basil, chopped
1 teaspoon salt
1 / 4 teaspoon pepper
1 / 4 teaspoon Tabasco sauce

How To Make:
1. Preheat oven to 350F degrees.
2. In a large bowl, combine eggs and ricotta until well blended. Then add the grated parmesan cheese, Tabasco, salt and pepper.
3. Add the tomatoes that have been chopped, basil and zucchini to mix eggs. Stir well, then add the pieces of day-old bread.
4 Grease a pan [9 X 13] with olive oil. Pour batter into pan. Enter it in the oven, bake for 30 minutes until casserole swelled and browned.
5. Once cooked, remove from oven and let cool. Cut into sections, 6-8 pieces.
