
Ingredients:
2 pounds potatoes, peeled and cut into 2 inch.
4 eggs, whisked
4 tsp grated parmesan cheese
2 tbsp butter
1 tbsp melted butter
1 tsp salt
1/3 cup sour cream
1/2 tsp pepper
1/4 cup chopped fresh chives

How To Make:
1. Boil the potatoes in a pan of water until boiling, until the potatoes are tender. Then drain.
2. Add butter and sour cream.
3. Preheat oven to 375F degrees.
4. Mix eggs, Parmesan cheese and fresh chopped chives.
5. Stir well after adding the potatoes.
6. Place in a casserole dish that has been smeared with butter.
7. Bake for 20-30 minutes until the top of the light brown.
