Banana Sour Cream Pancake

2 ripe bananas, diced, plus extra for serving
2 extra-large eggs
3 tbsp sugar
2 tsp baking powder
1 tsp pure vanilla extract
1 tsp grated lemon zest
1 1/2 cups flour
1 1/2 tsp kosher salt
1/2 cup sour cream
3/4 cup milk
Unsalted butter
Pure maple syrup

How To Make:
1. Sift flour and baking powder, add sugar and salt. Mix in a bowl.
2. In another bowl, combine sour cream, milk, eggs, vanilla and lemon zest. Then mix the wet ingredients with dry ingredients. Stir until blended.
3. Melt 1 tablespoon butter in large skillet, over medium heat. Make pancakes, and cook until browned on both sides of the cake.
4. Repeat until all dough exhausted. Serve with banana slices, spread with butter and maple syrup.
