
Ingredients:
100 g butter
175 g caster sugar
2 eggs
4 tablespoons low-fat milk
1 teaspoon baking powder
1 tsp lemon juice
175 self-raising flour
Lemon zest
How To Make:
1. Prepare a square baking pan 20 x 20 x 4, basting with butter and sprinkle with flour.
2. Preheat oven to 350F degrees.
3. Using electric mixer, beat butter and sugar until thick. Add eggs one at a time while continuing on the beat, until well blended.
4. Enter milk, baking powder, lemon juice and lemon zest, while continuing in the shakes.
5. Turn off mixer, add flour. Stir until well blended.
6. Pour into baking pan, spread them evenly. Bake in oven for 35 minutes or until cooked golden brown color. Let cool.
7. Serve with a sprinkling of powdered sugar topping.
