Ching-He Huang's Sweet And Sour Pork Recipes

Ingredients:
250 g pork fillet, thin slices
1 egg, beaten
227 g pineapple chunk, sliced and juice retained
1 green pepper, deseeded and cut into chunk
1 red pepper, deseeded and cut into chunk
1 tbsp cornflour
1 tbsp light soy sauce
1 tbsp clear rice vinegar
1 tbsp fresly grated root ginger
1 tsp cornflour blended with 1 tbsp cold water
Salt to taste
Ground White pepper to taste
Groundnut oil for deep frying

How To Make:
1. Combine egg and cornflour in a bowl, stirring until a dough. Add the pork chops into flour mixture, season with salt and pepper.
2. Heat the pan with high heat, fill with lots of oil.
3. Fried pork chops, using a slotted spoon, until golden brown. Then remove and drain, and place it on absorbent paper.
4. Pour oil from skillet, set aside.
5. In the same skillet, pour 1 tbsp oil, heat until smoky. Add ginger, red pepper, green pepper. Stir quickly. Then add pineapple.
6. Season with soy sauce, vinegar and brown sugar.
7. Add the blended cornflour, stirring until thickened.
8. Add pork, stir until pork is mixed with the sauce.
