
Ingredients:
4 sweetcorn cobs
2 red chillies, deseeded and chopped
1 onion, finely sliced
200 g caster sugar
400 ml rice vinegar
2 tsp corn floour
1 tsp salt
1/2 tsp coriander seed, crushed
1 Lime, zested and juiced

How To Make:
1. Remove the corn from the cob granules. Cook in boiling water, then drain.
2. In a saucepan, combine onions, chillies, coriander seeds, orange rind and juice, sugar, salt and vinegar. Bring to a boil.
3. Add the sweet corn, bring to a boil in a small fire.
4. Dissolve cornstarch with 4 tablespoons water, then add the mixture into the sweet corn, and cook for 5 minutes until sauce thickens.
5. Serve.
