Ingredients:
250 g plain white organic flour
150 g grated smoked Ashdown Foresters organic cheese
125 g polenta
100 g cooked and cooled sweetcorn kernels, or tinned and drained
30 g unsalted butter, melted
200 ml milk
2 eggs
4 tsp baking powder

How To Make:
1. Preheat oven to 200C degrees.
2. Coat muffin tin with baking paper.
3. In a bowl, combine all dry ingredients. Make the dough well, then holes in the middle.
4. In another bowl, combine corn kernels, cheese and all the wet ingredients. Whisk until all incorporated.
5. Then pour the liquid mixture into dry holes. Stir all ingredients until incorporated and thickened.
6. Spoon batter into muffin tin. Then sprinkle with grated cheese.
7. Bake in oven for 20 minutes or until golden. Serve.
