Ingredients:
600 g carrots , cut into batons
850 ml beef stock
1 1/2 kg shin of beef or stewing beef, cut into cubes
4 garlic cloves , crushed
3 tbsp flour
2 large onions , sliced
3 bay leaves
A glass of red wine
few thyme sprigs
vegetable or sunflower oil , for frying
jacket potatoes or mash, to serve

How To Make:
1. Heat oil in large skillet.
2. Place meat in a bowl, sprinkle with flour and seasonings, stir until coated all.
3. Fry meat until browned.
4. Reduce the oil in a skillet, add onion and carrot. Stir and cook until soft. Cover for 10 minutes.
5. After that, add the garlic. Then pour the wine, stir, let it boil.
6. Pour wine mixture over meat. Add broth, bay leaf and thyme, heat until boiling. Cover and let stand for 2 1/2 hours until the meat becomes tender and sauce is absorbed.
7. Serve with mash potatoes.
