Ingredients:
25g walnut halves, chopped, plus 12 more for the tops
2 large eggs
100 g butter , well softened
100 g self-raising flour
100 g light muscovado sugar
2 tsp instant coffee , mixed with 100 ml boiling water, then cooled
Ingredients For The Toping:
200 ml tub mascarpone
2 tbsp light muscovado sugar

How To Make:
1. Preheat oven to 180C degrees.
2. Prepare cupcake tins, cover with baking paper.
3. Beat butter, sugar, eggs, flour, coffee and a little salt.
4. Add walnuts and stir well.
5. Spoon batter into cupcake tins.
6. Bake in oven for 20 minutes until golden. Remove and cool.
7. For the topping: enter the mascarpone, coffee and sugar into a bowl and stir well.
8. Spread topping mixture in each of the cupcakes. Serve.
