Ingredients
4 eggs
8 slices smoked salmon
2 English muffins , halved
2 tbsp white wine vinegar
a little butter , for spreading
chopped chives , to serve
For The Hollandaise Sauce:
125g unsalted butter , diced
3 egg yolks
2 tsp lemon juice
2 tsp white wine vinegar

How To Make:
1. Make the hollandaise Sauce: In small bowl, combine lemon juice and vinegar. Add egg yolks, beat manually, until frothy. Then, put the bowl in boiling water, stirring until thickened while. Gradually add butter, stirring constantly. Cook until a few minutes. Remove, and keep warm.
2. Break the eggs in boiling water is added vinegar. Reduce heat, stir the water gently to slide the egg. Remove eggs with slotted spoon when cooked.
3. Bake the bread for a while, and then enter the salmon slices, then place the eggs over salmon. Spoon hollandaise over eggs, garnish with chopped scallions and serve.
