Light And Fresh Potato Salad Recipes

Ingredients For Dressing:
2 tbsp canola oil
1/4 cup seasoned rice vinegar
1/4 tsp salt
1/8 tsp freshly ground black pepper

Ingredients ForĀ  Salad:
5 cups cubed red potato
1 cup chopped peeled cucumber
3/4 cup sliced grape or cherry tomatoes
3/4 cup chopped green bell pepper
1/2 cup chopped orange bell pepper
1/4 cup chopped green onions
1 can sliced ripe olives, drained
1/2 tsp salt

How To make:
1. Meka the sauce: Mix all sauce ingredients in a large bowl, stir until all ingredients mixed.
2. Make the salad: in a pot with water (enough to soak the potatoes), place the potatoes and salt. Cover and bring to a boil. Cook until potatoes are tender. After that drain.
3. Add the potatoes into a bowl of sauce, stirring gently.
4. Add cucumbers and other ingredients, mix well. Cover and chill.
