Sweet Potato Casserole

Sweet Potato Casserole Recipes

Ingredients For Casserole:
2 1/2 pounds sweet potatoes, peeled and cut into chunks
2 large eggs
1/2 cup milk
1 tbsp canola oil
1 tbsp honey
2 tsp freshly grated orange zest
1 tsp vanilla extract
1/2 tsp salt, or to taste

For the Topping:
1/2 cup chopped pecans
1/2 cup whole-wheat flour
1/3 cup packed brown sugar
1 tbsp butter, melted
1 tbsp canola oil
4 tsp frozen orange juice concentrate

How To Make:
1. Boil the potatoes with salted water in a saucepan. Cover and cook until soft. Drain, then mashed until smooth, to be a mash.
2. Preheat oven to 350F degrees.
3. Prepare the baking pan, spray with coking spray.
4. Combine eggs, oil and honey in a bowl, beat. Add mashed potato and stir well.
5. Add milk, orange peel, vanilla and salt. Stir well. Then spread in pan.
6. Make the topping: In a bowl, combine flour, brown sugar, lemon juice, oil and butter. Stir with fork until crumbly. Add pecans. Stir again.
7. Sprinkle pecan mixture over potato mixture.
8. Bake the casserole for 35 minutes until golden.
