Kedgeree  Recipe

Ingredients:
350 g smoked haddock
175 g pilau rice
100 g peas
25 g butter
1 tsp curry powder
2 large eggs, hard-boiled and quartered
1 bay leaf
Pinch of cayenne pepper (optional)
Lemon wedges
Snipped chives, to garnish

How To Make:
1. Place the haddock in a frying pan, put water to boil, cover and leave for 10 minutes. Drain, and peel skin.
2. Meanwhile, cook rice according to instructions. Add peas, cook until all water is absorbed.
3. Add the fish, cayenne, curry powder and butter. Stir well.
4. Serve Kedgeree with pieces of egg, lemon and onion slices.
