Peach & Almond Muffins

Peach & Almond Muffins Recipe

Ingredients:
3 large eggs
100 g self-raising flour
100 g golden caster sugar, plus a little extra for sprinkling
25 g ground almonds
25 g butter, melted
1 tbsp flaked almonds
2 tsp peach conserve or apricot jam
2 small peaches
few drops of almond extract
half-fat crème fraîche, to serve

How To Make:
1. Preheat oven to 220C degrees.
2. In a large bowl, combine eggs, sugar, almond extract. Whisk until frothy manually.
3. Pour the egg mixture into melted butter, stirring constantly until well blended.
4. Fold the dough in the flour, Alon powder and salt.
5. Halve the peaches
6. Pour batter into muffin tin, add the butter, peach slices and berries on top. Also sprinkle with almonds and sugar.
7. Bake in preheated oven for 25 minutes, until puffed and golden.
8. Serve with creme fraiche.
