1 large ripe, sweet pineapple
50 g caster sugar
Finely grated zest of 1 lime
Leaves from 20 g packet fresh mint
How To Make:
1. Clean the pineapple, and cut into small pieces. Then set in a small glass. Cover and chill.
2. In a food processor, combine sugar, lime zest and mint leaves. Process briefly, until destroyed.
3. Sprinkle over the pineapple and serve.
