Ingredients:
500 g plain flour
50 g golden caster sugar, plus 2 tbsp for the glaze
50 g dried cranberries and/or blueberries
50 g sultanas
50 g butter, melted
7 g sachet easy-blend yeast
200 ml milk, warmed
1 tsp salt
1 tsp ground mixed spice
1 egg, beaten
Grated zest of 1 lemon

How To Make:
1. In a large bowl, combine flour, yeast, sugar, salt, spices, fruit and lemon zest. Make the dough until firm.
2. Coat muffin tin with baking paper.
3. Make the dough into a ball, as many as 12, place in muffin tin.
4. Cut across the top of the dough, then cover and let stand for 30 minutes.
5. Preheat oven to 20C degrees.
6. Bake loaves for 15-20 minutes until golden.
7. Mix remaining sugar with 2 tbsp water, brush the bread with sugar water, shortly after exiting the oven.
8. Serve.
