Chorizo And Smoky Shrimp Recipe

Ingredients:
6 oz fully cooked chorizo sausage, cut in 1/4-in. slices
2 bags frozen honey chipotle shrimp
1 bag frozen corn, black bean, tomato, green pepper and onion mixture (Latino Blend)
2 tbsp cooking oil
1/4 cup water
Chopped coriander.

How To Make:
1. Heat oil in large skillet. Cook chorizo until golden.
2. Add frozen vegetables, add water. Cover, reduce heat. Simmer until vegetables are tender.
3. Meanwhile, put shrimp in the microwave and cook according to package directions.
4. Remove the skillet from the heat, then add the shrimp and liquid into the skillet. Stir well.
5. Serve shrimp with rice, garnished with chopped coriander.
