Ingredients:
6 eggs
1 medium potato
1 small onion
1 cup cooked and shredded chicken
1/2 cup mozzarella cheese
1/4 cup milk
2 tbsp butter
1 tbsp olive oil
Red and green bell pepper, halved
Salt and pepper to taste

How To Make:
1. Preheat oven to 350F degrees.
2. Combine milk, eggs and salt. Stir well.
3. Wash and peel potatoes, diced.
4. In a skillet, saute the potatoes with the olive oil until soft. Season with salt.
5. Thinly sliced onion and bell peppers. Add the stir potatoes. Stir well. Lift.
6. In a heat proof bowl, melt butter, then pour the egg mixture, add the chicken and vegetables, then add mozzarella cheese on top.
7. Bake for 20 minutes.
