Ingredients:
10 prawns, peeled, deveined
1/2 cup lotus seeds
1/3 cup green peas
1 tbsp chopped scallion
1 tbsp minced ginger
1 tbsp rice wine, or dry sherry
1 tbsp cornstarch
1 tbsp cornstarch, mixed with 4 tbsps.water.
2 tbsp vegetable oil for stir-frying
1 tsp salt, or to taste
1 tsp white sugar

How To Make:
1. In a bowl, combine shrimp and 1 tbsp cornstarch, rice wine and salt. Stir well, and soak for 30 minutes.
2. Heat the vegetable oil in a skillet, saute scallion and ginger until fragrant. Then add shrimp, stir until shrimp turn pink.
3. Add the lotus seeds and green peas, season with salt and sugar.
4. Add the cornstarch and water mixture, stirring briefly until thickened.
5. Serve.
