Macaroni Cheese With Leeks And Bacon

Macaroni Cheese With Leeks And Bacon Recipe

Ingredients:
300 g macaroni or other pasta shapes
120 g Cathedral City Lighter cheese, grated
25 g butter
25 g plain flour
550 ml semi-skimmed milk
4 rashers of smoked back bacon, chopped
2 leeks, trimmed, finely sliced and washed
1 pinch of nutmeg
salt and black pepper

How To Make:
1. Cook pasta according to package directions. Drain.
2. Meanwhile, heat the oil in a frying pan and fry the bacon over high heat until cooked. Add leeks, saute until wilted.
3. In a small saucepan, combine butter, flour and milk. Heat over low heat, stirring constantly until mixture becomes smooth and thick. Season with salt and pepper, and add 100 g of Cathedral City Lighter cheese.
4. Preheat grill.
5. Combine pasta with leek mixture. Place in a heat proof dish, then sprinkle with the remaining 20 g of cheese.
6. Grill for 4 menoit or until golden and cooked cheese.
7. Serve.
