Ingredients:
3 eggs, separated
1 tbsp unsalted butter
1/4 tsp kosher salt
1/8 tsp freshly ground black pepper
1/2 cup corn kernels, fresh
1/4 cup goat cheese, crumbled
4 fresh chives, chopped

How To Make:
1. In a medium bowl, combine egg yolks, corn, salt and pepper. Beat until well blended.
2. In another bowl, beat egg whites until smooth. Then fold in the egg yolk mixture, stir until blended.
3. Melt the butter in a non-stick skillet, over medium heat. Enter the egg mixture, and cook for 1 minute. Do not stir.
4. In half of the eggs, sprinkle with 3/4 of cheese and 3/4 chives. Then fold the other half, and to form a half circle. Leave until cooked.
5. Sprinkle the remaining cheese and chives on the half of the omelet that has been folded, and fold again until you get a triangle shape.
6. Serve immediately.
