Ingredients:
8 large eggs, divided
4 slices bacon, diced
3 pounds baking potatoes, like russets, peeled and cut into 1/2-inch cubes, and parboiled
3/4 cup chopped yellow onions
1/2 cup chopped poblano or green bell pepper
6 tbsp unsalted butter, divided
1 tbsp freshly chopped fresh sage leaves
2 tsp minced garlic
1 tsp Essence
Salt and freshly ground black pepper

How To Make:
1. Heat the oil in a skillet, over medium heat, add bacon and cook until crispy. Remove, set aside.
2. In the same skillet, saute onion and pepper. Stir occasionally, until soft. Add garlic, saute briefly.
3. Add 2 tablespoons butter, potatoes, sage, essence, 3/4 teaspoon salt and 1/4 teaspoon pepper. Stir occasionally until the potatoes warm.
4. Serve.
