Spinach And Red Pepper Panini Recipe

Ingredients:
12 ounces (2 bags) baby spinach
8 slices whole grain country bread
1 large or 2 smaller roasted sweet red peppers, sliced
2 garlic cloves, minced
1/4 pound mozzarella, grated
3 tbsp olive oil
Salt and freshly ground pepper

How To Make:
1. Prepare a large bowl, fill with ice water.
2. Prepare a saucepan with salted water, bring to a boil. Add spinach, boil for 10-20 seconds, then lift and transfer into a bowl of ice water, let stand for several minutes. Then drain, squeeze until no more water. Chop roughly.
3. Heat oil in a skillet, over medium heat. Add garlic, saute until fragrant. Then add the spinach, stirring until spinach coated in oil. Season to taste with salt and pepper. Remove from heat.
4. Preheat the Panini grill.
5. Place the spinach over the bread slices, add slices of roasted peppers, add the cheese. Then cover with slices of bread. Press.
6. Brush the outside of the bread with olive oil, then bake until cheese melts.
7. Cut in half and serve.
