Portuguese Seafood Stew

Portuguese Seafood Stew Recipe

Ingredients:
3 dozen little neck clams, scrubbed and clean
1 lb large shrimp, peeled and deveined
1 lb scallops
1.75 oz (1 link) chorizo sausage, sliced
1/2 onion, chopped
3/4 cup dry white wine
1/4 cup water
1/2 cup fresh parsley, finely chopped
1 tbsp extra virgin olive oil
4 cloves garlic, minced
1 tomato, diced
1 bay leaf
salt and fresh pepper to taste

How To Make:
1. Heat olive oil in large skillet, saute garlic and onion, for 2 minutes.
2. Add half the parsley, chorizo, bay leaf, tomatoes, wine, salt and pepper. Simmer for 5 minutes.
3. Add clams, stir well and cover. Cook for 5 minutes, until clams open. Then add the Shrimps and scallops. Leave for 2-3 minutes until seafood is cooked through.
4. Serve with a sprinkling of the remaining parsley.
