Ingredients:
24 Jumbo Shells
1 pound ground beef
16 ounces cottage cheese, drain excess liquid
10 ounces frozen spinach, chopped, thawed, well drained
1 clove garlic, minced
1 egg
1 Jar spaghetti sauce, divided
1 cup finely chopped fresh mushrooms
1/2 cup finely chopped onion
1/4 cup grated parmesan cheese
2 tbsp olive oil
1 tsp Italian seasoning
1/4 tsp black pepper

How To Make:
1. Preheat oven to 350F degrees.
2. Cook jumbo shells according to package directions. Flush with cold water and drain.
3. In a hot skillet, cook ground beef until no pink. Add olive oil, onion, garlic, mushrooms and spices.
4. Add spinach, cottage cheese and parmesan cheese. Mix well.
5. Pour 1 / 2 cup spaghetti sauce into baking dish. Add jumbo shells. Add beef mixture. Then pour remaining spaghetti sauce. Sprinkle with parmesan cheese.
6. Cover with foil and bake for 40 minutes.
