Ingredients:
6 flour tortillas
1 medium onion, chopped
1 clove garlic, finely chopped
2 cups shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1/2 cup sour cream or plain yogurt
1/4 cup shredded Cheddar cheese
1/3 cup chopped green bell pepper
1 can tomato sauce
2 tbsp chopped fresh parsley
1 tbsp chili powder
1 tsp chopped fresh or
1/2 tsp dried oregano leaves
1/4 tsp pepper
1/4 tsp ground cumin

How To Make:
1. Preheat oven to 350F degrees.
2. Prepare and Grease a square baking pan.
3. Combine Monterey Jack cheese, 1 cup cheddar cheese, sour cream, onion, parsley and pepper. Mix
well.
4. Spoon cheese mixture into each tortilla.
5. Roll tortillas.
6. Set in roasting pan.
7. Combine remaining ingredients, except 1/4 cup cheddar cheese. Pour over enchiladas. Then
sprinkle the remaining cheddar cheese.
8. Bake in oven for 20 minutes, until cheese bubbly.
9. Serve to 6 servings.
