Ingredients:
12 large sweet potatoes
1 cup toasted pecan pieces
1 cup miniature marshmallows
3/4 cup unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 tsp ground cinnamon
1/4 tsp salt

How To Make:
1. Preheat oven to 400F degrees.
2. Wash the sweet potatoes until they are clean. Pin-prick in several places, and place on baking sheet.
3. Bake until cooked and tender.
4. In a bowl, combine butter, brown sugar and flour. Stir until crumbly.
5. Add cinnamon, pecans, salt and marshmallows. Stir together to combine.
6. Cut the sweet potatoes, but only half. Press to open slightly. Fill in the streusel topping.
7. Bake in oven for 20 minutes, until topping is golden.
