Spanakopita (Greek Spinach Pie)

Spanakopita (Greek Spinach Pie)

Ingredients:
3 eggs, lightly beaten
2 pounds spinach, steamed, squeezed, drained and chopped
1 bunch green onions, sliced
1 cup feta, crumbled
1/4 cup dill, chopped
1/4 cup parsley, chopped
1/4 cup olive oil
phyllo dough
salt and pepper to taste

How To Make:
1. Preheat oven to 350F degrees.
2. In a large bowl, combine spinach, egg, feta, dill, parsley, salt and pepper.
3. Brush bottom of pan with olive oil.
4. Take a sheet of phyllo dough, brush tops with olive oil.
5. Add spinach mixture over phyllo, then cover with a sheet of phyllo, brush it with olive oil. Repeat until you have 6 layers.
6. Bake in preheated oven for 30-50 minutes, until golden brown.
