Ingredients:
4 medium egg whites
50 g caster sugar
25 g dark chocolate, grated
25 g cocoa powder, sifted
4 tbsp half-fat crème fraîche
1 tbsp Grand Marnier or Cointreau
1 tsp oil
Zest and juice of 1 orange

How To Make:
1. Preheat oven to 300F degrees.
2. In a saucepan, combine sugar, orange peel and juice. Bring to a boil. Stir until sugar dissolves. Then pour in a bowl, add cocoa and liqueur, stir.
3. Beat the egg whites until stiff. Then fold in syrup.
4. Prepare four ramekins that have been smeared with oil. Pour the batter in the ramekins.
5. Bake in oven for 8-10 minutes, until souffle.
6. Spoon the creme fraiche in the middle, sprinkle with chocolate and serve.
