Ingredients:
1 pound delicata squash
1/4 cup chopped dried apricots
1/4 cup dried cranberries
2 tbsp extra-virgin olive oil
2 tbsp finely chopped chives
2 tbsp toasted sliced almonds
1 tbsp apple cider or apple juice
1/4 tsp salt
1/4 tsp freshly ground pepper

How To Make:
1. Cut squash in fourths lengthwise, seeded, then thinly sliced crosswise.
2. In a saucepan, fill the water 1 inch, complete with a steam basket. Steam the squash for 5-7 minutes until tender.
3. In a large bowl, combine oil, apple cider, salt and pepper. Stir together.
4. Add squash, cranberries, apricots, and chives. Mix well until coated.
5. Serve with a sprinkling of almonds.
