Christmas Fruit Cake

Christmas Fruit Cake Recipe

Ingredients:
500 g whole wheat flour
440 g grated carrots
250 g mixed dark and light raisins
120 g chopped almonds
120 g chopped hazelnuts
120 g granulated sweetener
80 g low fat margarine
3 tbsp orange juice
2 tsp baking powder
1/2 tsp mixed baking spices
1/4 tsp ground cinnamon
1/4 tsp salt
2 eggs
1 orange rind
optional 2 tbsp brandy or rum

How To Make:
1. Preheat oven to 350F degrees.
2. In a bowl, combine flour, baking powder and salt. Mix well. Then add the margarine, and stir by hand. Process until smooth.
3. Add fruits, nuts, orange rind and spices. Stir until all ingredients well blended.
4. In another bowl, beat eggs, add half of the granulated sweetener.
5. Mix eggs into dry mixture, stir well, then add the orange juice gradually, stirring constantly until the dough becomes soft.
6. Prepare cake pan, pour the batter into the cake pan, and bake for 45-60 minutes.
