Stuffed Mushrooms

Stuffed Mushrooms Recipe

Ingredients:
16 ounces fresh mushrooms, crimini or white button
4 or 5 thin slices Genoa salami, chopped
2 cloves garlic, finely chopped
1/2 cup dry breadcrumbs
1/4 cup onion, finely chopped
3 tbsp olive oil, divided
3 tbsp shredded mozzarella cheese
2 tbsp butter
2 tbsp lemon juice
2 tbsp grated parmesan cheese
1 tbsp fresh parsley, chopped
1/4 tsp crushed red pepper flakes
Salt and freshly ground pepper to taste

How To Make:
1. Preheat oven to 350F degrees.
2. Clean mushrooms, remove caps and stems, finely chopped stems.
3. In a saucepan, pour 2 tablespoons olive oil, heat over medium heat. Enter the chopped mushroom stems, salami, onion and garlic. Saute until vegetables are tender.
4. Add butter, let melt. Add lemon juice and flour bread. Stir to combine. Add red pepper, salt and pepper.
5. Add parsley and parmesan cheese and stir well. Add, olive oil, if it looks too dry.
6. Spray baking pan with nonstick spray. Arrange the mushroom caps, sprinkle with salt and pepper. then, using a spoon, fill each cap with breadcrumb mixture. Sprinkle mozzarella cheese, then bake for 15 minutes, until mushrooms tender.
7. Serve.
