Ingredients:
1 lb package dried black beans
1 smoked ham hock (or smoked pork chop)
2 bay leaves
1 large minced white onion
3 cloves garlic chopped
3/4 bunch of parsley finely chopped (no stems)
1 tbsp extra virgin olive oil
Salt
Pepper

How To Make:
1. Soak beans overnight.
2. In a pressure cooker, combine beans, ham hock and bay leaves. Add water, to cover the beans. Cook for 45 minutes.
3. Meanwhile, in a skillet, saute garlic, onion and parsley. Add salt and pepper to taste.
4. When beans are cooked, combine the onion mixture into the beans and cook for 20 minutes, until thickened.
5. Serve with rice.
