Ingredients:
1 pound chicken breast tenders
2 cups frozen pepper stir-fry, thawed
1 cup frozen cut okra, thawed
3/4 cup thinly sliced celery
1/4 cup chopped fresh parsley
1 can diced tomatoes, undrained
1 tbspĀ butter
3/4 tsp sugar
1/2 tsp salt
1/2 tsp dried thyme
1/4 tsp ground red pepper

How To Make:
1. Heat a non-stick skillet, over medium heat. Spray the cooking spray. Add chicken and cook for 3 minutes, until browned on both sides.
2. Add pepper stir-fry, okra, celery, sugar, salt, red pepper and dried thyme. Mix well.
3. Add tomatoes, bring to a boil, cover, then reduce the heat, let stand for 5 minutes.
4. Add parsley and butter, stirring until butter melts.
