Ingredients:
1 salmon jowl
1 block firm tofu, cut into 1-inch cubes
1 bunch scallion, cut into 2-inches sections
2 slices fresh ginger, cut julienne
5 tbsp vegetable oil
2 tbsp oyster sauce
1 tbsp chopped scallion
2 cups water
salt, or to taste
white sugar, or to taste

How To Make:
1. Wash salmon and cut into pieces, adjust the size.
2. Heat oil in a skillet, over medium heat. Fry know until golden. Remove and drain. Then, cut the cross but do not drop out.
3. Reduce the oil in a wok until 1 tbsp. Stir fry ginger until aromatic, then add salmon and tofu. Season with oyster sauce, white sugar and salt, to taste. Let cook for 3 minutes.
4. Prepare the clay-pot, heat over medium heat. Place a piece of scallion on the basis of clay-pot. Then transfer the mixture tofu and salmon into the clay-pot. Add water, bring to a boil and allow it to water decreases.
5. Serve, sprinkled with chopped scallion.
