Ingredients:
1 1/2 pounds grass-fed ground beef
3 garlic cloves, roughly chopped
1 medium yellow onion, chopped
1 red bell pepper, roughly chopped
2 1/2 to 3 cups water
1 can diced tomatoes
3/4 can tomato paste
1/4 cup red wine vinegar
2 tsp Mexican oregano
1 1/2 tsp salt
1 tsp rubbed sage
1/4 tsp fresh black pepper
grated cheese or sour cream (optional)

How To Make:
1. With a Dutch oven, combine beef, oregano, sage, salt and pepper. Cook meat until brown, over medium heat.
2. Add chopped onion and bell pepper. Cook for 10 minutes. Then add the wine vinegar, let stand for 5 minutes.
3. Add chopped garlic, and tomatoes. Add tomato paste and mix well.
4. Add water, bring to a boil. Reduce heat and cook for 30 minutes.
