Ingredients:
5 eggs
3 potatoes, peeled and diced
1/2 yellow onion, thin sliced
2 tbsp butter, diced into small pieces
2 tbsp olive oil
pinch of kosher salt
pinch of fresh ground pepper

How To Make:
1. Preheat oven to 350F degrees.
2. Boil potatoes until cooked, drain and set aside.
3. Whisk the eggs, add salt and pepper, beat until well blended. Then stir in the potatoes and butter.
4. Heat a nonstick skillet, add olive oil, saute the yellow onion until browned.
5. Add the egg and potato mixture into skillet, reduce heat, and cook for 2 minutes, then stir until well blended.
6. Transfer the skillet to the oven and cook for 20-30 minutes.
