Ingredients:
1lb boneless skinless chicken breasts, cut into bit sized pieces
4 corn tortilla chips, broken into pieces
1 can black beans, drained and rinsed
2 cups cooked hot white rice
2 cups crushed tomatoes
1/2 cup green pepper, diced
1/4 cup onion, diced
3 tsp chipotle in adobo sauce, minced
1 tsp garlic powder
1/2 tsp cumin

How To Make:
1. Heat a large saucepan, over high heat.
2. Enter the chicken, black beans, Tomatoes, pepper, onion, chipotle, cumin, and garlic powder. Bring to a boil, then reduce heat and shimmer for 20 minutes until fully cooked chicken.
3. Place the rice into a serving bowl, add the chicken mixture over rice.
4. Top with chips, cheese, sour cream and lettuce.
