Banana Pound Cake

Banana Pound Cake Recipe

2 ripe bananas, mashed
2 cups all-purpose flour
1 1/2 cups chocolate chips
1/2 cup unsalted butter, cubed
1/2 cup milk
2 tbsps granulated sugar
2 tbsps bourbon
2 tsps baking powder
1 tsp pure vanilla extract
1 tsp cinnamon
1/2 tsp kosher salt
1/4 tsp ground cardamom

How To Make:
1. Preheat the oven to 400F degrees.
2. Grease the pan with non-stick spray or butter and set aside.
3. In a food processor or mixer, whisk together flour, sugar, baking powder, cinnamon, salt, and cardamom. Add in the cubed butter, and using either a food processor or hands, or a pastry cutter, blend the butter into the flour mixture until coarse crumbs form.
4. Add in the milk and mix until moistened. Add in the bananas, bourbon, and vanilla extract, and mix or pulse until evenly combined. Fold in the chocolate chips.
5. Spread the batter in cake pan and bake for 30 minutes, then rotate the pan, and bake for another 20-25 minutes, until a toothpick comes out clean. Remove from the oven and serve.
