Ingredients:
1 egg
1 1/4 cup sifted all-purpose flour
1/2 cup unsalted butter, softened
3/4 cup sugar
1/3 cup creamy peanut butter
1/4 cup mini-semi-sweet chocolate chips
1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt

How To Make:
1. Heat oven to 350F.
2. Beat butter, sugar and peanut butter in a large bowl with an electric mixer until fluffy, about 2 to 3 minutes. Add egg and vanilla then beat in well.
3. In a small bowl, sift together the sifted flour, baking soda and salt. Gradually add to fluffy butter mix. Stir in chocolate chips.
4. Using an 1-inch scooper, measure out 1-inch dough balls and place on ungreased cookie sheet about 2-inches apart.
5. Bake for 10 to 12 minutes, until light brown around the edges. Center of cookie will look soft. Allow the cookies to cool on the cookie sheet for a minute or two, then transfer to a wire rack to finish cooling.
