100 g light muscovado sugar
100 g self-raising flour
100 g butter, softened, plus extra for greasing
2 ripe bananas
2 tbsp milk
2 tsp ground cinnamon
Icing sugar, or Toffee sauce, or Ice cream
How To Make:
1. Put the butter in a 1-litre baking dish and microwave on High for 1 min or until melted.
2. Add 1 1/2 bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.
3. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen.
4. Serve warm, dusted with icing sugar, or a drizzle of toffee sauce, or a scoop of ice cream.
